Self-Saucing Chocolate Pudding

Ingredients
½ cup milk, any variety
1 egg
1 tsp vanilla
80g butter, room temperature
1 cup self-raising flour, sifted
2 tbsp cocoa powder, sifted
½ cup brown sugar, packed
Sauce:
2 tbsp cocoa powder
¾ cup brown sugar, packed
1 ¼ cup boiling water
Method
1. Preheat oven to 160’C. Set aside 24-28cm pan or baking dish.
2. Whisk together butter and egg. Add milk and vanilla and combine.
3. Add sifted flour and cocoa powder to wet ingredients and combine until smooth, then, add brown sugar and stir until fully combined.
4. Pour mixture into pan. Set aside. Boil your water.
5. In a small-medium bowl, combine cocoa powder and brown sugar together for your sauce. Once combined, sprinkle your mixture in an even layer over your batter.
6. Using the back of a metal spoon, slowly pour the boiling water over cocoa and sugar mixture, ensuring you cover the entire surface. Pouring it over the back of a spoon ensures you don’t disturb the batter underneath.
7. Carefully transfer pan to your oven. Bake for 30-35 minutes or until the centre springs back upon touch.
8. Serve warm with vanilla ice cream.
