Chocolate Loaf Cake

Gluten-free, dairy-free, refined sugar-free.

Ingredients:

1/2 cup avocado oil

1/2 cup milk (I used almond)

1/2 cup pure maple syrup

4 eggs

3 tsp baking soda

2 tsp vanilla extract

1/2 cup cacao or cocoa powder (I used half-half)

3 cup almond meal

Method:

  1. Preheat oven to 160’C and line a loaf tin with baking paper.

  2. Mix all wet ingredients in a bowl.

  3. Add all dry ingredients to the bowl and combine with wet.

  4. Place mixture in loaf tin and bake for approx. 45-minutes, or until cake bounces back with light touch.
