Ginger Loaf Cake

Ingredients:

1 1/4 cup self-raising flour
3/4 cup coconut sugar
1 tsp ground ginger
1 tsp baking powder
2 eggs
3/4 cup milk of choice (I used almond)
125g unsalted butter, melted
1 tsp vanilla extract
1/4 cup glacé ginger, chopped

Method:

  1. Preheat your oven to 180’C. Line a loaf tin with baking paper.

  2. In a large bowl, add all ingredients except for the glacé ginger. Combine until you have a smooth, silky batter. Add in glacé ginger and stir through. Batter consistency should be fairly runny.

  3. Pour batter into prepared loaf tin and bake for 45-minutes or until cooked through. To test, you can press gently in the centre to see if it bounces back or you can stick a skewer or knife through the centre. If it comes out clean then it is ready.

  4. Leave aside to cool and enjoy!
