Brown Rice, Lentil & Halloumi Salad

Ingredients:

500g brown rice, cooked
400g brown lentils, canned and rinsed
200g edamame, fresh
1 red onion, finely diced
1/4 cup parsley, finely chopped
225g halloumi, grilled

Dressing:
1/3 cup extra virgin olive oil
1/4 cup red wine vinegar (or to taste)
2 tsp honey
2 tsp garlic, crushed
Salt
Pepper

Method:

  1. Prepare brown rice, lentils, edamame, onion and parsley. Place in bowl and set aside in fridge.

  2. Slice halloumi approx. 1cm thick and grill over a hot frying pan until golden on each side. Set aside.

  3. Prepare dressing by placing all ingredients in a bowl and whisking together. You are welcome to alter the dressing to taste. I prefer my dressings quite vinegary so I also lean more towards that flavour!

  4. Pour dressing over prepared salad. Top with grilled halloumi and enjoy!

*Keep salad covered and in the fridge for up to 3-4 days. Best eaten within 1-2 days.
