One-Pan Lamb & Mediterranean Vegetables

Serves: 3-4

Cook time: 40-minutes

Ingredients
6-8 lamb midloins
4 garlic cloves, whole
1 red onion, thickly diced
2 zucchinis, 1cm sliced
1 capsicum, diced
200g cherry tomatoes
¼ cup kalamata olives, pitted
100g feta, soft
120g rocket, fresh
1 lemon, juiced
3-4 sprigs of thyme, fresh
1 tbsp extra virgin olive oil
Salt and pepper
Balsamic glaze (optional

Method

 1.    Preheat oven to 200’C. Set aside large baking tray.

2.    Season lamb midloins generously with salt and pepper. You can add any other seasonings, if you desire. Place on baking tray.

3.    Prepare garlic, onion, capsicum, zucchinis, tomatoes and olives. Place them on top of lamb with the sprigs of thyme. Drizzle with olive oil and lemon juice and season with salt and pepper.

4.    Bake for 40 minutes or until lamb is cooked to your liking. Turn lamb after 20-minutes.

5.    Once cooked, remove from oven and take out thyme sprigs. Crumble feta over the top and add rocket whilst hot.

6.    Remove lamb from dish and serve on plate. Top lamb with vegetable medley and a little bit of pan juice as the dressing. Optionally, you may like to drizzle some balsamic glaze on top.
