Caprese Salad

For when you need to mentally escape to Italy…aaah, so dreamy!

Ingredients:

4-5 tomatoes (heirloom would be perfect but truss on the vine are also lovely), sliced 1cm thick

200g fresh mozzarella, sliced 1cm thick

2 tbsp Balsamic vinegar or glaze

2 tbsp Extra virgin olive oil

Fresh basil

Salt + Pepper

Method:

  1. Slice tomatoes and fresh mozzarella. Overall each slice, alternating between ingredients.

  2. Lightly drizzle oil and balsamic over the tomatoes and cheese. Top with fresh basil.

  3. Upon consuming, season to taste.

NOTE:

If making ahead of time, leave off the salt until you intend to eat. Salt will draw out the water from the tomatoes and it will become very wet and soggy.
