Cauliflower and Leek Soup
Ingredients:
1 tbsp EVOO
1 brown onion, roughly chopped
3 cloves garlic, peeled
1 head of cauliflower, roughly chopped
2-3 large leeks, roughly sliced
2 medium potatoes, roughly chopped
1L vegetable stock
1 tbsp vegetable stock powder
Pepper, to taste
Method:
Heat oil in a medium/large pot. Add onion and garlic and cook until transparent.
Add leeks and cook down.
Add cauliflower, potato, stock powder and liquid stock. Bring to boil then reduce to low heat.
Simmer for 30 minutes or until cauliflower and potato are soft.
Blend and serve with fresh crusty bread.
