Fresh Fish Tacos

I’m honestly hungry just looking at these…

Serves 2-4

Ingredients:

Tortillas (Wheat, corn or GF)

2 fillets of fresh white fish

2 cups red cabbage, thinly sliced

1/4 cup natural Greek yoghurt

1/4 cup kewpie mayo

Squeeze of lemon juice

Salt, to taste

1/2 bunch coriander, sliced

Simple Guacamole:

1 avocado

Squeeze of lemon

Salt + pepper

Mexican Seasoning (for fish):

Cumin powder

Paprika

Garlic powder

Chilli flakes

2 tsp fresh garlic

2 tbsp olive oil

Squeeze of lime

Method:

  1. Make seasoning mix and rub into fish. Set aside.

  2. Thinly slice cabbage and add yoghurt, mayo, lemon and salt. Set aside.

  3. Place avocado in a bowl and smash. Add lemon and seasoning. Stir and set aside.

  4. In a frying pan over medium heat, warm up some olive oil. Add seasoned fish to the pan and cook until ready. Once finished, place on a plate and break up into smaller chunks.

  5. Warm tortillas in a frying pan or in the microwave for 30 seconds.

  6. Assemble! I like to put the cabbage down on a warm tortilla, then the fish, then guac and then all the coriander you can dream of!

Optional:

-If you don’t like corriander, grow up. Just joking haha. Yes, you can swap for another herb or totally omit all together (but you’re missing out!!)

-My cooking is always to the taste. These are really yummy and fresh but please, have fun, make it your own. Add more flavours or a bit of sweetness to the cabbage if you would like.

-Go nuts on the guac. I kept mine simple but you could add diced red onion, tomato, garlic, chilli flakes etc.
