Tomato summer salad

One of my favourites!

Ingredients:

800g different colour tomatoes
1 garlic clove (or 20, measure with the heart)
Olive oil
Lemon 
100g Feta 
Fresh basil
Red chilli 

Pickled onions:
1/2 tsp Honey 
3/4 cup White wine vinegar 
1 Red onion thinly sliced 
1 tsp Salt

Method:

  1. Slice red onion.

  2. Whisk together honey, vinegar and salt. Pour over onion and let sit. Continue to stir whilst slicing tomatoes. You may like to do this a few hours in advance however 30-minutes ahead of time is also fine!

  3. Slice tomatoes. I like to change how I slice them so that you get different shapes and sizes.

  4. Gentle toss picked onion amongst the tomatoes. I like to add a little bit of the vinegar from the onions to dress the salad.

  5. Crumble feta over tomatoes.

  6. Finish with fresh basil.
