Garlic & Chilli Prawn Pasta
Serves 2
Ingredients:
250g dried spaghetti
200g prawns, raw
200g cherry tomatoes, halved
50g parmigiano reggiano, grated
1 lemon, zest and juice
3 cloves garlic, crushed
3 tbsp extra virgin olive oil
Handful of fresh parsley, finely chopped
Chilli flakes, optional
Salt and pepper
Method:
In a large pot, cook pasta according to packet. Once cooked, reserve 1/2 cup pasta water and drain.
Over a low heat, in a medium frying pan warm olive oil and garlic. Once fragrant, add prawns and tomatoes and cook until tomatoes are slightly softened.
Add lemon rind, juice, parmigiano, cooked pasta and optional chilli flakes. Combine well, slowly adding pasta water to create a silky sauce in the pan. You may not need the entire 1/2 cup.
Once pasta is well coated, add parsley, season with salt and pepper, give it a gentle stir and serve immediately.
