Basil Pesto
Ingredients:
2 cups fresh basil
2 large garlic cloves
1/4 cup pine nuts, toasted
1/4 cup parmesan, grated
Pinch of salt
1/4 cup extra virgin olive oil
1 lemon, juiced
Method:
1. In a food processor blend the basil. Add in all ingredients except EVOO and lemon. Blend well.
2. Whilst processor is on, add lemon juice, then slowly drizzle in oil until desired consistency. You may like to add more oil however it can over power the flavour of the basil to keep tasting as you go.
3. Store in an air tight container in the fridge. I like to make this a few days prior to using or at the beginning of the week to allow the flavours to fully come out.
