Vanilla-Almond Butter Stuffed Dates

Makes 10

Ingredients:

10 Medjool dates, pitted

2 tbsp almond butter, natural and unsalted

1/4 tsp vanilla extract

100g dark chocolate

1 tsp coconut oil

Sea salt flakes

Method:

  1. In a small bowl, combine almond butter and vanilla. Set aside.

  2. Slice or gently tear the medjool date in half long ways to remove pit.

  3. In the opening of your date, push a generous amount of almond butter in and squeeze the sides back together. It doesn’t matter it the almond butter is poking out the top, the more the better (in my opinion)!

  4. Set aisde on a plate lined with baking paper. Place in the freezer temporarily whilst melting down your chocolate.

  5. Place chocolate and coconut oil in a small bowl and melt down. You may like to use a bain-marie or the microwave (in 30-second intervals, stirring between each).

  6. Once chocolate is melted, take dates back out of freezer. Place one date into the melted chocolate mixture and using a fork, coat it fully. Place back on baking paper. Repeat until all dates are coated in chocolate.

  7. Sprinkle sea salt flakes over dates and place in the freezer until set. This will take about 5-minutes.

    Storage:

    You make like to store the dates in a container in the fridge or freezer. I like to store mine in the freezer- the date becomes chewy and the almond butter sets. Delicious!
