Banana Loaf

Ingredients:

1 1/3 cup wholemeal flour
2 eggs
1/2 cup honey
1/3 cup coconut oil, melted
1/4 cup milk of choice
2 ripe bananas, mashed
1 tsp bi-carb soda
1 tsp vanilla extract
1/2 tsp cinnamon, ground
Pinch of salt

Optional toppings: chocolate chips, nuts, dried fruit, fresh/frozen berries.

Method:

  1. Preheat oven to 160’C fan forced. Grease a small loaf tin.

  2. In a medium bowl, whisk together oil and honey. Once combined, add eggs and milk and combine.

  3. Add in bi-carb soda, vanilla, cinnamon, salt and flour and whisk well. Fold in mashed bananas and optional other toppings.

  4. Pour mixture into loaf tin and bake for approx. 50-55 minutes, or until a knife/skewer comes out clean.

  5. Store in an airtight container or slice into individual servings and freeze.
