Lemon Crumble Bars

Ingredients:

1 1/2 cup plain flour
1 cup rolled oats
1 cup brown sugar, packed
1/4 tsp baking soda
1/4 tsp baking powder
3/4 cup butter, melted
1 can condensed milk (coconut or regular)
2 egg yolks
1/2 cup lemon juice, fresh
2 tsp lemon zest
1 tsp vanilla extract
Pinch of salt

Method:

  1. Preheat oven to 180’C fan forced. Line baking tray with baking paper.

  2. In a bowl, combine flour, oats, sugar, baking soda and baking powder until fully combined. Add in butter and stir until crumble consistency forms.

  3. Press half the mixture into the bottom of the tin, making the surface as flat as you can. Set aside remaining mixture. Bake for 10-12 minutes or until slightly golden on top.

  4. Whilst base is baking, in a medium bowl, whisk condensed milk, egg yolks, lemon juice, zest, vanilla and salt until smooth and incorporated. Set aside until base is cooked.

  5. Once cooked and golden, pour lemon mixture over top. Crumble remaining mixture over the top and bake in the oven for approx. 20 minutes, or until golden on top.

  6. Allow to cool and then place in the fridge for 2 hours and up to overnight. Slice into 16 bars and store in an airtight container. This can also be frozen.
