Peanut Butter Brownie Protein Balls

Ingredients:

15 medjool dates, pitted
1/4 cup almond meal
1/4 cup protein, vanilla
1/4 cacao powder
2 tbsp chia seeds
2 tsp coconut oil, melted
1 tsp vanilla extract
2 heaped tbsp peanut butter, natural
1 tsp honey or maple syrup
Pinch of salt
Optional: dark chocolate chips

Method:

  1. In a food processor, blend dates until it forms a smooth, thick paste.

  2. Add in all other ingredients (except chocolate chips if you are using them) and combine until well incorporated. Taste and alter where/if needed. Stir in chocolate chips.

  3. Using a tablespoon, scoop mixture and roll into balls. Place in an airtight container and store in the fridge. These can also be frozen.
